Ingredients

  • 1 Onion – diced
  • 2 Cloves Garlic – crushed
  • 500g Chicken Breast – whole
  • 1 Jar Passata
  • 1/2 Cup Chicken Stock
  • 1tbsp Fresh Basil (can substitute with dried basil)
  • 1/2 Eggplant – diced
  • 2-3 Zucchini – sliced
  • 200g Mushrooms – sliced

Method

  1. Brown chicken in a frying pan
  2. Add all ingredients into a slow cooker
  3. Cook on high for 4hrs or low for 8hrs
  4. Shred cooked chicken with a fork once cooked
  5. Serve with brown rice.
  6. Salt and pepper to taste.
