Ingredients
- 1/2 cup Coconut oil
- 1/2 cup Maple syrup
- 3 Mashed bananas
- 2 Eggs
- 1/3 cup Greek yoghurt
- 1/2 tsp Cinnamon
- 1 tsp Baking soda
- 1 tsp Vanilla essence
- 1/2 tsp Salt
- 1 3/4 Cup Wholemeal flour
Method
- Preheat oven to 165°C
- Mix coconut oil and maple syrup together (may need to microwave for 10ish seconds if coconut oil goes solid). Then add mashed bananas, eggs, yoghurt, stirring to combine.
- Add cinnamon, baking soda, vanilla essence and salt. Lastly mix in flour.
- Spoon mixture into a lightly greased loaf tin. Bake for approx 50-60min or until cooked through.
- Cool for 20 minutes in the tin before turning out onto a wire rack.
