I have a big passion around creating healthy, raw and of course super delicious desserts for my friends and family. So this Easter I had requests to make a Chocolate Mousse (a house hold favorite in my family) however little did they know, it was going to be a mousse made from entirely from avocado. So without further ado, enjoy my Easter Inspired (I know, I know, I’m a little late to the party) Chocolate Mousse.

Nut Base


  • Handful macadamias
  • Handful cashews
  • ½ cup shredded coconut
  • Coconut oil as required


  • Blend macadamias, shredded coconut, coconut oil and cashews until well blitzed (you may need to adjust measurements to create consistency)
  • Place into silicone moulds and put in freezer


Avocado Mousse


  • 2 ripe avocados
  • 50-60g raw cacao (depending on personal taste)
  • 100ml organic maple syrup
  • 125ml coconut cream (add more to reach consistency if needed)
  • 50ml coconut oil
  • Vanilla extract
  • Pinch of sea salt


  • Combine, ALL ingredients in a blender, and blend until smooth. *You may need to adjust measurements to achieve the correct consistency
  • Place into silicone moulds and put in freezer


Warm Vegan Salted Caramel Sauce


  • Coconut cream
  • Coconut sugar


  • Place all ingredients into a saucepan and bring to the boil
  • Once boiling, reduce heat and simmer for 45 mins or until caramelised and dark golden in colour
  • Allow to cool slightly

Take avocado mousse out of moulds and allow to sit for 5-10 mins. Place on plate and pour warm salted caramel sauce over ENJOY!
