Ingredients

  • 1/2 cup Coconut oil
  • 1/2 cup Maple syrup
  • 3 Mashed bananas
  • 2 Eggs
  • 1/3 cup Greek yoghurt
  • 1/2 tsp Cinnamon
  • 1 tsp Baking soda
  • 1 tsp Vanilla essence
  • 1/2 tsp Salt
  • 1 3/4 Cup Wholemeal flour

Method

  1. Preheat oven to 165°C
  2. Mix coconut oil and maple syrup together (may need to microwave for 10ish seconds if coconut oil goes solid). Then add mashed bananas, eggs, yoghurt, stirring to combine.
  3. Add cinnamon, baking soda, vanilla essence and salt. Lastly mix in flour.
  4. Spoon mixture into a lightly greased loaf tin. Bake for approx 50-60min or until cooked through.
  5. Cool for 20 minutes in the tin before turning out onto a wire rack.
